CHICKPEA SALAD SANDWICH.
Ingredients
- 1/4 cup @fabalishfoods vegan mayo
- 1 tbsp lime juice
- 1 tsp curry powder
- 1/2 tsp cumin
- 1/4 tsp turmeric
- pinch of salt + black pepper
- a clove of garlic, minced
- 15 oz can of chickpeas
- 1/2 yellow onion, diced
Directions
- Start by adding the @fabalishfoods vegan mayo to a glass dish and mixing with lime juice. Add allllll the spices, along the minced garlic. Mix it all together, along with enough water to make a dressing consistency.
- In another bowl, mash up the chickpeas and add in the diced onion. Pour the dressing on top and stir until everything is well coated.
- To make a sandwich, add the chickpea salad mixture onto bread with spinach and tomato, then pan-fry until crispy.
- PRO TIP: slather more @fabalishfoods vegan mayo onto the bread for the BEST grilled sammie ever!
