CHICKPEA SALAD SANDWICH.

Ingredients

  • 1/4 cup @fabalishfoods vegan mayo
  • 1 tbsp lime juice
  • 1 tsp curry powder
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • pinch of salt + black pepper
  • a clove of garlic, minced
  • 15 oz can of chickpeas
  • 1/2 yellow onion, diced

Directions

  1. Start by adding the @fabalishfoods vegan mayo to a glass dish and mixing with lime juice. Add allllll the spices, along the minced garlic. Mix it all together, along with enough water to make a dressing consistency.
  2. In another bowl, mash up the chickpeas and add in the diced onion. Pour the dressing on top and stir until everything is well coated.
  3. To make a sandwich, add the chickpea salad mixture onto bread with spinach and tomato, then pan-fry until crispy.
  4. PRO TIP: slather more @fabalishfoods vegan mayo onto the bread for the BEST grilled sammie ever!
